Chicken Adobo | |

3 lbs skinless chicken | 1/3 c vinegar |
1/4 c soy sauce | 8 cloves crushed garlic |
8 whole peppercorns | 2 tbsp brown sugar |
Thoroughly wash chicken, cut into serving size pieces and place in saucepan. Add vinegar, soy sauce, garlic and peppercorns but do not mix. Cover and simmer until chicken is cooked for approximately 45 minutes to an hour. Serve over rice. | |
Lumpia Shanghai (Egg Rolls) | |
Filling: | |
1 cup ground pork | 2 tbsp chopped garlic |
1/4 cup chopped shrimp | 1 tsp pepper |
1 tbsp soy sauce | 1 tsp salt |
1 pkg lumpia wrapper | Sweet & Sour Sauce |
Combine "filling" ingredients together. Place 1 tbsp onto wrapper, spreading thinly and roll tightly. Seal edges with water. Deep fry in oil until golden brown. Cut into 2" pieces and serve with Sweet & Sour Sauce. | |
Leche Flan | |
4 egg yolks | 1 c sugar |
13 oz evaporated milk | 1 tsp vanilla extract |
Scald milk in double-broiler for 15 minutes. Blend egg yolks with sugar, milk and vanilla extract. Pour into mold lined with carmelized sugar. Place this in a bigger pan half filled with water and bake until mixture becomes firm. Watch carefully so it doesn't burn. Cool before removing from mold. |
